If you try to make a beer that is too advanced, you might screw it up and waste all of the ingredients.  It takes a while to make beer, so this can be very frustrating.  If you start with a simpler recipe, then you can learn the ropes a little bit before trying something harder.  Also, you will be more likely to end up with stuff that you can actually drink.  So, start with the easier beer making recipes and work up from there.
